Menu Plan Monday


Well, since I forgot that the banks are closed on Monday due to the labor day holiday, my shopping trip will be on Tuesday this week. But in the meantime I can still share the plan.

I just happened to have one night last week that was too busy to make the planned meal so we ended up making a fast dinner of scrambled eggs and toast. Which is fortunate for me since I need to stretch the budget to cover monday this week.

Breakfasts

Plain Oatmeal
Creamy Cream of Wheat w/ Maple Syrup and Bananas
Waffles
Cereal Squares
Pumpkin Muffins
Amish Baked Oatmeal
Pancakes

Dinners

Veggie Chili and WW Cornbread
Cottage Cheese Casserole (from More-with-Less cookbook in sidebar) green salad
Cabbage Casserole (an over abundance of cabbage in my garden)
Lentil Burrittos (OMG! These are amazing!)
Vegetarian Meatballs, green beans
Mexican Rice Casserole, green salad
Hamburger Barley Stew, Peasant Bread


So I'll hit the stores tomorrow and post my Weekly Shopping Trip aftewards.

Looks like a frugal yet yummy week. I've seen the Cottage Cheese Casserole on a couple of menus and it looks interesting... may have to add that one to my "to try" list!

I make those pumpkin muffins all the time. Love them. And I make baked oatmeal regularly too. I'm real excited about the Banana Maple Cream of Wheat. That sounds like it will be a big hit at my house. And the lentil burritos. On my to try list as well. Thanks for sharing.

The pumpkin muffins sound good. I too have a lot of cabbage almost ready to be picked. I must have the best bank ever, they are not only open today, but most days are open until 8PM. I don't know why, but I'm thankful they are!

I am just wondering were the ground beef came from for this week menus. I looked at your last few shops and don't see any stocking up on the beef. Keep up the great job. I love reading your blog. I also went from spending 700 to 800 aa month now to about 350 to 400. I am working on it! I hope to get it down to 75 a week. We are a family of 4.

I tracked down the hamburger purchase to July 14th. I bought a 6 lb package and divided it into 8 freezer bundles to tuck away for later. Since we don't usually eat alot of hamburger this lasted me a long time. Thanks for the question. I just used it up this week so It's good to know that it seems I use about 1 package of hamburger per week.
