Menu Plan Monday


This week I have a full $60 to shop with. I feel rich!


Breakfast

Oatmeal
Pancakes
Leftover Muffins (quick breakfast for a busy day)
Eggs and Toast

Dinners

Quiche made with leftover cheeses and bacon, served with fruit
Sausage and Potato Bake with green beans
Spaghetti with meat sauce and green beans
Leftover Night
Taco Soup from the freezer

Normally I shop on Mondays and post the results late Monday night but due to the holidays I won't get to shop until Tuesday. So if you'd like to participate in the Shopping Round Up it's just going to go up a little later than normal. And go see Organizing Junkie for more menu plans.

Thank you for a WONDERFUL site! I just posted on my blog (debtfreejourneythroughchristwhostrengthensme.blogspot.com)that I am already $143.23 OVER on my $500 grocery budget for the month and I really needed to start applying the "pantry principle" to my menu planning. SHopping for my weekly menu is just too expensive and is pushing me over budget with the groceries every month! I love reading your blog for daily inspiration about the grocery situation!!

Have you ever tried the sausage and potatoe bake WITHOUT the cream cheese?? I have a child who gets sick from cream cheese, so I am going to try this recipe without it......I'll let you know how it tastes!!

I may change my menu up and have your sausage bake. I keep forgetting about that and I have a bunch of sausage in the freezer!

I absolutely love the banana banana bread. I am getting ready to make a couple of loaves today with some over ripe bananas I got marked down to .29 a lb. It makes a great breakfast or snack.

Thanks for the great links! I'm thinking that I might be able to pull off the Hamburger Barley stew from my current bedrest if DH does the veggie prep work the night before. It sounds good, and I should only have to be up a few minutes to throw it all in the crock pot! I have to find verrrrry simple recipes for the next few weeks.

I also think I'm going to see if he can make that banana bread, as we have very ripe bananas in the kitchen and I think it's simple enough that even he can handle it!! :-)

On the Taco Soup, have you found a way to substitute for the HV Ranch Mix? I'm trying to do away with that in my home...because of cost and the MSG. I do pretty well subbing for Taco Se4asoning with just spices.

I make a soup that sounds similar to the Hamburger Barley Stew. Mine has lentils and dried peas too. Yum.

To KM - on the taco soup - I made it last week without the ranch mix. I have a son who is allergic to milk and I left it out so he could eat some of the soup too. I thought it was just fine without it. Of course, I don't know if would be better with it or not. Hope that helps.

I'm curious as to what kind of sausage you use for the sausage potato bake. I'm assuming the already cooked/smoked sausage link in a big link but the way some of the comments off of Recipezaar sounded, maybe I'm wrong.
KM: I make taco soup all the time and recently saw a version that called for Ranch mix so I used it and couldn't tell a difference! I've never added it since.
