Menu Plan Monday

The wind is blowing, the trees are beautiful orange and yellow and the rains have started. I really do love this time of year. It's so cozy with a roaring fire in the evenings and blustery days. It's our most productive time of the homeschool year and being indoors brings out our creativity too. So we're busy dreaming up crafty things to try and reading lots of good books and cuddling. Lots and lots of cuddling.

On the menu this week is a potluck, a date night, and an extra meal for a family with a new baby.

Breakfasts

Toast with homemade jam and sliced apples
Cream of wheat with brown sugar and pecans
Pumpkin Spice Bread and pears
Chocolate Banana Smoothies and bagels
Oatmeal with apples and brown sugar
Poached eggs and toast
Leftover Freezer Pancakes


Dinners

Date night
Bean and Veggie soup with Buttery Bread Machine Rolls
Spaghetti with steamed broccoli
Baked Macaroni and Cheese, Balsamic Tomato Salad
Potluck (bringing pumpkin bread)
Leftover Buffet

The Korean Chicken Thighs look delicious!! I think I am adding that to my menu next week, have you tried them in the crockpot by any chance?

Oy, though, over 1000 mg sodium per serving of chicken thighs? Sigh, that's one we won't be making (soy sauce adds up too fast for us).

But keep 'em coming--I really like checking in for your dinner ideas.

Yummy! A friend is bringing us apples from NC this week so I can't wait to try them in the Slow-Cooker! YUMMY!!! Thanks for posting!

I'm making a baked mac and cheese this week too! Our recipes look similar and I'm hoping it turns out delicious. It's my first try at the homemade version. This is the second time I've stopped by your blog and I find it amazing that you can feed 6 people with your budget.

I have never seen the chicken thigh recipe before. I will have to try it! I thought it was going to mimic the "japanese mums chicken" but it didn't. I highly recommend that one if you haven't tried it yet.

Thanks for all you great menu plans. I'm going to try the Korean chicken thighs and the crock pot apple recipes since I have all the ingredients. Never thought to put sesame oil in my marinade, we just use it make fried rice. I'm alway glad to find easy chicken recipes.
