Menu Plan Monday


I've got a busy week ahead and not much time to cook. It's so helpful to take a look at your calender before you menu plan so you can be realistic about prep and cook times and how they relate to your busy days. Our week is full of final soccer games, prep for a craft bazaar my mother and I are doing this weekend, finishing our homeschool standardized testing, dance lessons, bible studies and all the normal life stuff. I ended up NOT making the French Lentil Soup from last week so that will carry over into this week.

Here's what's cooking.

Breakfast

Toast with homemade jam and pears
Berry smoothies and Bagels
German Oven Pancake with lemon juice and powdered sugar
Granola and Yogurt Parfaits
3 Oat Baked Oatmeal with Apples and cream
Leftover Muffins

Dinners

French Cream of Lentil Soup and rolls
Baked Spaghetti, green beans
Pantry soup and garlic toast
Crockpot Whole Chicken, Garlic Potatoes, Steamed Broccoli
Leftover Buffet

Thank you for the link to the baked spaghetti! We had one once with soy crumbles that a friend made us but my husband can't have soy anymore. Do you think this recipe would be good without the cheese? We don't mix meat and dairy in our house.

To save some eggs you can use the recipe that I use for the Dutch Baby (German pancake). I got it out of a Better Homes and Gardens cook book years ago. It's the same baking time though it's better if you bake it in a cast iron skillet or dutch oven.

Dutch Baby
4 eggs
1 cup flour
1 cup milk
1 teaspoon nutmeg
lemon juice and powdered sugar for the top when you serve it

I live in Alaska and there is no way to get groceries for $60.00 a week. You are lucky!!
