Menu Plan Monday
A fisherman friend gave me some salmon he caught so we are sneaking some yummy Pacific Northwest fish into our diet this week. Last week we ate from our pantry and still had plenty to eat. My fresh fruits and veggies are a little low this week so I'll be looking for deals in that area although I still have garden fruit and veggies that I canned from this summer that I'll be using.
So here's what on the menu for this week.
Breakfasts
Oatmeal
Eggs and whole wheat toast
Yogurt with frozen blueberries
Homemade Granola
Veggie and cheese omelettes
Pancakes
Leftover Pancakes
Dinners
Baked Salmon, Steamed Broccoli
Soup and rolls
Korean Roast Chicken Thighs, Rice, Stir Fried Veggies
Chicken Burgers and Tater Tots
Spaghetti, Garlic Bread, Green Beans
Taco salads
Leftover Buffet

I have always wondered about your breakfast menu, as some of your breakfasts look like they would keep one going until dinner in the evening, while others just look like a quick snack. If I only ate yogurt and blueberries for breakfast, I'd probably want more food an hour later. However, if I had an omelette it would keep me full for a long time. How do you compensate for the lighter breakfasts you serve (or do you)?
That's a super looking menu. What does your $60 a week include? Laundry? Toiletries? Or is it just food?
hey there..I made some salmon last night that was so easy and basically no clean up.& DELISH...here is how I did it..got a big piece of foil..put a little bam on the center..chopped a bit of onion, garlic, a handful of fresh spinach leaves, some cilantro leaves ...then sprinkled some olive oil on that....put my salmon fillet on that..then salt, and tony chasery (sp? ), and a little garlic powder..drizzed just a bit more olive oil...squeezed two lemon slices on the top..then put the lemon slices under the fish with the other goodies....CLosed up the foil like a little satchel...backed at 375 for 25 min....served it over some steamed brown rice..it was SO SO SO SO SO SO YUMMy...and all i had to do was throw away the foil as the clean up!!!
Have you tried that baked salmon recipe before? It's delicious! One of our favorites.
