Menu Plan Monday
Life is busy and I need to delegate more. So, with my two older kids volunteering to cook dinner one night a week that leaves me in charge of only 4 dinners since Sunday is a leftover buffet. That rocks! The kids all either cook breakfast for themselves or make choices from a freezer stocked with homemade pancakes, muffins or waffles. And I usually throw together a simple lunch before I head out to my own classes in the afternoon. Slowly this crazy schedule is working out. So here's our menu plan for the week.
Breakfast
Choice of fruit and yogurt smoothies, bagels, freezer pancakes, muffins, oatmeal or waffles.
Dinners
Hot dogs and french fries (son is cooking)
Fettuccine Alfredo, salad, bread sticks (daughter cooking)
Crockpot Falafel
Grilled cheese and Tomato soup
Homemade Veggie and Pasta soup with rolls
Denny's French Toast
Leftover Buffet

hmmmm I have a wonderful low fat microwave recipe for alfredo that is as good as Olive Gardens.
1 c 2% mile
2 tbs flour
2 tbs margarine
1/2 tsp salt
3 cloves garlic
1/4 c Parmesan cheese
1 lb fettuccine.
Mix all ingredients except fettuccine in 1/2 quart casserole. Cook uncovered 2 min on high. Stir and cook 1-2 min more on high, stirring after 1 min until thick. Stir in cooked pasta and microwave 1-2 min more.
serves 6.
Your teen might like how easy it is.
I am in school and homeschooling as well...totally understand the crazy schedule....except mine aren't old enough to fix meals yet (6 and 2)...one day! :)
