Menu Monday

I'm spending the day getting the two older kids (and big eaters) ready to ship off for their Grandma-cation at the beach. That means I have less mouths to feed this week and I need to try really hard to make smaller meals. I'm so adapted to feeding the masses that it's hard for me to scale back. Some day it will be just the two of us again. ( sigh) Here's what is cooking this week.

Breakfasts: Oatmeal, farina, fruit, smoothies or freezer waffles


Olive Garden Fettuccine Alfredo

Crock pot Whole Roasted Chicken
Pasta Salad with rolls
Tuna Salad sandwiches
Lentil Burritos
Garden salads with french bread
Leftover buffet

I love the idea of a leftover buffet - we call it leftovers smorgasbord here - fancy name to fool the peeps! (:

We have started losing kids and it is an adjustment. I just plan breakfasts and dinners. We use leftovers for lunch and it works out well.
