Menu Monday


We spent the weekend doing some home remodeling projects that left my husband and I aching and exhausted. Getting old kinda stinks. But I'm so ready to start a new week and get my house back in order. School will be starting before you know it and I have tons of planning to do. I also picked up a free rice cooker this weekend from Freecycle so you'll be seeing a rice theme in most of my cooking as I learn to play with my new toy. Here is what's cooking this week.

Breakfasts: choice of...

Oatmeal or Farina, freezer pancakes or muffins, fruit


Dinners:
Beef and Broccoli Stir-fry
Mexican Vegetarian Casserole
Confetti Tortellini Salad
Tuna sandwiches and veggie tray
Quiche Lorraine and fruit salad
Fried Rice with leftover meat and veggies
Leftover Buffet

Being a die hard 4th generation Texan, my dad was not from far East Texas which is close to the Louisiana border. Therefore, he thought rice was a breakfast food. Cooked in buttery salted water and slathered with more butter, sugar, cinnamon and cream, it was a breakfast cereal. My mother on the other hand started everything with onions, bell pepper, and celery. Whether it was a hamburger, macaroni, tomato and cheese thingy or a gumbo dish, she made it that way and added RICE at least with the gumbo thingy or stuffed bell peppers.
I got a rice cooker for Christmas and I love it. I don't follow the instructions on mine, I do a 2 parts liquid to 1 part rice and add a little extra liquid. Mine seems to cook fast. Love using homemade chicken stock, a little mirapoix (frozen from Kroger 88cents a pack and a life saver). Add a little butter when done. My bottom of the rice always turns brown, but I love the crusty rice.
