GCC Recipe Swap - Healthy Breakfast

We eat lots of muffins for breakfast because they are easy to make, the kids can just grab them, and I can make extra for the freezer to save time. But it would be easy to start their day with sugar filled "cake" muffins rather than something healthy. So these are a great nutritious alternative that tastes just as good. I hope you like them.

Whole Wheat Honey Banana Muffins

  • 3 1/2 cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 tablespoons wheat germ, wheat bran or flax meal
  • 2/3 cup canola oil
  • 1 cup honey
  • 4 eggs
  • 2 cups mashed ripe bananas
  • 1/2 cup hot water
  • a handful of dried old fashioned oats

Stir together dry ingredients. Beat oil and honey together, add eggs and beat well. Add bananas and beat to combine. Add dry ingredients to wet, alternating with hot water; mix well after each addition. Spoon batter into 24 greased muffin cups. Sprinkle with a bit of dried oats. Bake at 325 for 15 minutes or until golden brown and test done.

Your muffins look delicious. It is one of mine New Year resolutions to bake more healthy muffins and loaves for my kids rather then buying snacks for school.
