This is one of our favorites...
Quesadillas
2 tortillas
grated cheese
salsa or marinara sauce for dipping
Heat a little oil in a frying pan or griddle, put the first tortilla on it, sprinkle with cheese and place the second tortilla on top. Brown on both sides and slice with a pizza cutter into triangles. Dip in sauce.

I haven't made quesadillas in a while, now that I have tortillas, I'll have to make some this weekend.

We have also put tortillas in butter and sprinkled cinnamon and sugar on them for a sweet treat - and to make that even yummier - put a scoop of ice cream right in the middle when it is warm! Oh yum. I was thinking - HEY I should've posted about that - but I already did!!! I am going to link to it here too!!!

We love quesadillas!! I make a mean chicken quesadilla for dinner and it is a huge hit! Served with a cornbread "cake" as the kids call it and it is filling!

This is a great quick dinner or lunch for us! Throw in a little bit of leftover chicken, and it's even better!
I didn't post because we don't do snacks much. Normally I just say, "have some fruit (whatever's on sale) or carrot sticks," or, "dinner will be ready soon," or, "you should have finished your sandwich at lunch, then you wouldn't be hungry now." Nice! But here's a list of a few (rare) snack favorites:
* yogurt
* hummus and pita
* peanut butter on graham crackers
* pistachios or other nuts
* raisins
* Meijer brand Chocolate Cranberry Rush Trail Mix(chocolate & white chocolate chips, raisins, dried cranberries, almonds, cashews, peanuts) YUMMY! :)
* simple (kid friendly but not really that healthy) trail mix (mini-marshmallows, chocolate chips, & raisins)
* chips & salsa (for hubby more than kids)
* nachos (chips covered with salsa, grated cheese, black beans, and jalapenos; baked until the cheese melts)
* cinnamon toast
that's more ideas than I thought I had, maybe I should have written my own post...oh well.
I'm looking forward to collecting these, my kids are always STARVING when they come home from school. I really needed some new tricks up my sleeve.

I don't have a blog but thought I'd tell you two we enjoy. Chocolate muffins, one chocolate cake mix, one can pumpkin, water called for on the box, little cinnamon, 1/4 cup mini choc chips. Blend all ingredients.
Bake at 350 for 25 to 30 minutes.
These are delicious and low fat with some fiber from the pumpkin. Only 2 points a piece on Weight Watchers!
Mock ice cream sandwiches
chocolate pudding mix
1 3/4 cup milk
1 cup cool whip
graham crackers
Mix the pudding & milk thoroughly stir in the cool whip, spread on graham cracker halves, top with another cracker, freeze on baking sheets. You can play with flavors and add in's. My kids like mini marshmallow stirred in and sometimes we dip them in mini chocolate chips.
