Huh? Can't have one without the other. So again, I challenged my thinking.
"Tomato soup doesn't just come out of a can. It had to start with tomatoes right? I have tomatoes."
So I whipped this up and it turned out pretty good.
Fresh Tomato Soup
8 Roma tomatoes
4 cups water
4 chicken bouillon cubes
1 cup powdered milk
1 tablespoon dried basil
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper to taste
Chop tomatoes (seeds, skin and all) and put into a pot with the water and bouillon. Boil until tomatoes are soft.
Blend hot soup until there are no chunks left. An immersion blender works best. For some reason hot soup in a stand blender likes to explode all over your shirt in a fiery hot mess of tomato puree. Just sayin'.
Pour soup back into pot and add all other ingredients. Simmer for 15 minutes to blend flavors.

I had the same revelation last week. Seems silly now to buy it when I have almost a dozen cans from my garden. I like to add roasted garlic to mine - yum!
Wow, that soup looks scrumptious! I always make tomato soup from tomato sauce :) But I am going to have to try this next year when we have a vegetable garden!

Thanks for this! I usually use diced canned tomatoes, but this will be nice when next summer's garden is spitting out more tomatoes than I know what to do with!
