Menu Plan Monday


Well, I survived last weeks non-grocery shopping menu and honestly, I couldn't even tell the difference. But I'm excited to hit the stores this week.


Breakfasts

Muffins or pancakes from the freezer
Baked Pumpkin Doughnuts and fresh fruit
Oatmeal with Brown Sugar and Apples

Dinners

Baked Ziti, Garlic Cheese Rolls, Salad (doubled for a family with new babies)
Chinese Chicken Balls, Sweet and Sour Sauce, Steamed Rice and Veggies
Leftovers
Soccer Pizza Party
Potluck - Taking Ranch Potatoes and Deviled Eggs
Check back tomorrow to see how far my $60 went.

Do you do dessert? My family goes through some serious $$$ in ice cream every week. I don't LOVE ice cream so it's safe to have in the house, but homemade cookies are my demise. Homemade ANYTHING is hard on me. I'm my own worse enemy.

Have you tried to freeze the pumpkin doughnuts? They look awesome but we have to leave for school at 7:30AM so I'm trying to make it work without Mommy getting up at 4am!

Ok I just made the Pumpkin donuts and they were a total FLOP!! I think my baking soda and powder were old. Anyway they are edible but just don't look as good as the picture. Hope yours are a lot better!!

We had the overnight apple cinnamon oatmeal this morning. It was great when my son got up at 6:30, but I stirred it for him, and left it warming for the girls. When they ate at 7:45, the oatmeal was sticky and mushy and they liked the flavor, but not the texture. So, my advice is to be sure and have everyone eat at the same time - then it's wonderful!!

Hi Gayle! I made a version of the Apple Overnight Oatmeal that turned out quite yummy so I thought I'd share it...

I mixed 2 cups chopped apples
1 tsp cinnamon and 1/3 cup brown sugar in a glass Corning Wear bowl that will fit into your crock pot.

Fill the crock pot with about 4 cups of hot water - not so much water that it will enter the bowl, though. Place the apple bowl into the crock pot and prepare the oatmeal.

1 cup Steel Cut Oatmeal
sauteed in 1 Tbls butter until lightly brown and nutty smelling. Add 1/4 tsp of salt and 4 cups of liquid (I used 3 cups water and 1 cup Vanilla flavored Silk - I've heard apple juice is good, too).

Pour oatmeal mixture into the apple mixture - stir slightly - cover and cook on low overnight.

We topped ours with pecans, raisins, and a touch more of brown sugar - delightful! Using the bowl makes an easier clean up and keeps the oatmeal a little more moist.

I made that Lentil and Brown Rice casserole on Saturday. Wow, that is one of the best meals I have made in a long time. It made the house smell great while cooking, too. Definitely making that one again.
