It's hard to believe that one year ago today I decided to chronicle my journey to feed my family as frugally as I knew how. In the early days it was a lot of mac & cheese and hot dogs but over the past 12 months I've learned to eliminate most of our processed foods and cook frugal meals from scratch. Oatmeal with sliced apples, cinnamon, and pecans
Poached eggs and toast
Chocolate chip muffins and bananas
Yogurt, Granola and fruit parfaits
Split Pea soup with rolls
Sausage and Potatoes, cornbread (doubled, 8 kids for dinner tonight)
Stir fry with leftover turkey and vegetables with rice
Tuna sandwiches, pickles, fruit (busy night)
Brown Rice and Lentil casserole and corn
