Menu Plan Monday


We received a spontaneous invitation to go to a friends house for dinner on Sunday night. We jumped at the chance to hang out with some amazing friends. And for dinner we were served steaks, mashed potatoes, steamed veggies and biscuits with jam. Dessert....ice cream sundaes. Such treats for us on this budget of ours. My 13 year old has been kindly asking for less "weird lentil stuff" and more meat. I leaned over and whispered to him, "savor this steak, baby!"

Yes, sometimes there is a revolt to all this beans and rice.

Breakfasts

Muffins from the freezer
Oatmeal with apples, cinnamon, and brown sugar
Pancakes with blueberry syrup
Poached eggs and toast
Sliced bananas in milk
french toast

Dinners

Leftovers
Chicken Noodle Soup and Buttery Bread Machine Rolls
Lentil Burritos with tomatoes, sour cream, olives, cheese, corn tortillas
Hamburger Rice Skillet with green beans

I LOVE lentils, and am always looking for new ways to fix them. I can't wait to try your lentil burritos. . .I wonder if my kids will even notice the lentils?

How much brown sugar and cinnamon do you put in your oatmeal? I would like to fix this myself rather than buying the Quaker pre-packaged oatmeal, but can't seem to get it right.

we have been on a budget here too. my mom invited us over for steaks, baked potatoes, asparagus and salads last night. what a treat!

OK, Gayle. I am desperate! My 12 year old son (will be 13 in April) is eating me out of house and home, but he wants meals for snacks. He is constantly whining that he needs "real food" not snacks. You know if he could go shopping he would pick out microwavable crud that is overly expensive. Any suggestions on keeping us both happy? Thanks!

I'm pleased to find your blog. We're on the Dave Ramsey plan so groceries need to see some savings. I have four kiddies at home too and I don't know if I could get it down to $60, but I think I spend alot less than most people I know. I don't think we have any of these stores you mention--dented can stores and I don't know what Winco is (We're in Ontario, Canada). My question though is about breakfasts. Hot breakfast is a rare thing around here, that's how I grew up. Do you do this because it's more frugal? Is buying boxed cereal more expensive? Or do you just not feel right (I've met some mums like that) not preparing something more substantial?

I does cost alot per serving for cold cereal and the milk to go with it. We love it so much that we each eat several bowls at a time and with six of us we could go through three boxes and nearly a gallon of milk each time we use it. It's a fun treat every once in a while but not very frugal for us. That's why I do alot of homemade hot breakfasts.
