I've got a nice laid back week ahead of me. There's not SO much on my plate that I'm feeling overwhelmed. That's the way I like it.
Breakfasts
Oatmeal with apples and brown sugar
Pancakes
Cranberry Scones and sliced bananas
Oatmeal
Toast and homemade jam
Dinners
Crockpot Lasagna and salad
Potluck - Spinach Salad with Honey Bacon Dressing
Leftover Night
Scrambled eggs, toast, fried potatoes
Check back tomorrow when I hit the stores. You can see if I fit all the ingredients for these recipes into my $60 budget. Even I don't know the answer to that yet.

Your menu looks yummy :) I plan my menus from Thursday to Wednesday, two weeks at a time, so I never participate in this, but I often come across peoples postings and it's fun to see what other people plan.
I recently made tater tot casserole for the first time--my husband loved the stuff. Go figure. :)

How come the crockpot lasgna is over 1000 calories. Is there any way to make it less? It looked really good.

I know its weird but I love the tator tot casserole...but never think to make it! We're making cranberry scones this week too! No lentils this week...your kids will probably be excited ;) I think lentils are great of course.
I'm wondering...if you do NOT find all of the ingredients necessary for your menu will you make changes while you're at the store..to stay within budget?

That's a good question. I keep track of what I'm spending at each store to make sure I'm going to be close to my budget. So I'm aware when my funds are running low and for example, instead of buying 5 dozen eggs I'll just get one dozen. I also plan my menus around ingredients I already have on hand so I'm only buying a few items to finish off each meal. I also know that I can't buy too much in the meat or dairy category at a time so I make sure my menu planning takes that into consideration.

Seeing the lemon muffins in your list reminded me...
There's a recipe for Lemonade Muffins that you've often used. I tend to not by frozen lemonade since we have a lemon tree and a ton of lemon juice from said lemons in the freezer. Is there any way to substitute that for the frozen lemonade concentrate?
I'm sure you could sub with fresh lemon juice.
I guess I'm not sure how to adjust the sweetener in the recipe, since the frozen lemonade is presweetened. Oh well... maybe I'll have fun experimenting!
