Use It Up Breakfast Turns Gourmet

I found myself with pancakes on the menu but several ingredients that I wanted to use up. We came up with a frugal-gourmet breakfast that was picture worthy.

I made pancakes from scratch adding in some oats, and OJ that needed to be used up.

1 1/2 cups flour
1 cup rolled oats
2 Tablespoons sugar
4 teaspoons baking powder
2 eggs
1 cup milk
1 cup OJ
4 Tablespoons cooking oil

I also found that I had some strawberries that had a life span of about 30 seconds and way, way in the back of the fridge.....a can of whipped cream.

That left us with fiber filled pancakes with a hint of orange topped with berries and cream.

Frugality ain't just beans and rice folks!

sounds yummy! I agree that frugality is not just beans & rice! :)

I had some bran cereal and fresh cherries that needed to be used up so I made up some cherry-apple bran muffins today! My kids who wouldn't even think about eating fresh cherries wanted to gobble up these muffins! You can find the recipe here

Really hating the fact that I'm dieting right now, these sound and look amazing!

That's one of the things I love about your blog - that you make all these super yummy sounding things and on that very little little budget! I'm inspired. :-)

That breakfast kicks beans and rices' butt.

These look delicious. I'm particularly fond of soon-to-be-overripe strawberries that are one nanosecond from going to the dark side (almost as if they're starting to long as there isn't any mold). Thanks for the recipe!

I love this! I find that the more frugal I get...the more creative I get...the more gourmet it SEEMS! Good job!
