Menu Plan Monday


The elk chili we tried last week was amazing. For my first foray into cooking wild meat, I was sold. So if you're looking for a good recipe for elk burger you might want to give it a try.

I have some leftover BBQ meatballs from our Superbowl party that I put into the freezer. They will find themselves creatively used in our menu this week.

I get lots of questions about the amounts of fruits and vegetables we eat because I don't always include them in my menu plans. I've been lazy in posting anything but the main dish. We eat lots of fresh, frozen, dried and home canned fruits and veggies so I've made an effort this week to show them so you can see where they are being served. Lot's of times I sneak them into recipes when I'm cooking. During the summers when garden veggies are in abundance I usually grate them up and store them in bags in my freezers. It's amazing how grated carrot or grated zucchini disappears into a nice thick spaghetti sauce or a soup. And I don't always note how I slip them in, but they are there.

Breakfast

Pea-nutty Apple Toast
Cottage Cheese and peaches
Poached eggs, turkey bacon, OJ
Raspberry Banana Smoothies, Bagels
Oatmeal with Raisins
Pancakes
Breakfast Leftovers
Dinners

Chicken Tortilla Soup, rolls, green salad
Sloppy Joes, Tater Tots, home canned applesauce
Italian Tuna Panini, pickles, home canned pears
Kids are gone....No cooking
BBQ meatballs subs, fruit and veggie tray
Spaghetti, home canned green beans
Dinner Leftovers Buffet

I love to sneak in veggies into our meals too. I puree frozen spinach and add it to spaghetti sauce. They never know! :)

I'm with Anonymous--who's going through your menu plans checking to make sure you're serving your family enough fruits and veggies?? Too funny! Hope people don't start doing that to me. I can't list every carrot stick that gets eaten as a snack!
