Menu Plan Monday
I'm excited for this week because I have lots of new recipes to try. I've been a little bored with our menu but this should shake things up a bit. I'll be trying out some new flax recipes. They fit into my low carb diet nicely and flax has some amazing health benefits to boot. I also found a bag of tilapia fillets hidden in the back of my freezer that I'll be using. So here's what's cooking this week.
Breakfasts

Apple n Oats Breakfast Pudding

Spinach and Mushroom Frittata

Gayle, what do you do for lunch? I didn't do very well with planning this week. I have three dinners---lasagna, chicken,rice,lemon soup, and pork roast with potatoes and salad.
The apple n oats pudding sounds yummy, but the link takes me to a pirate pork chop, which might be good for supper but def not breakfast :)
I haven't done a baked potato bar in forever! I think I'll have to do that soon!
