Menu Plan Monday


We have a birthday party to attend this week which means there is one night I won't have to cook. And when you cook A LOT, those days are like a little vacation. Here's what's cooking this week.


Breakfasts (Everyone makes their own)

Choice of yogurt and fruit smoothies, eggs in some form, or Apple Pie Muffins

Dinners

Chicken and Barley Stew
with Buttery Bread Machine Rolls
Broccoli and Garlic Pasta
Chickpea Burgers
Black Bean and Tortilla Bake
Grilled Cheese and Tomato Soup
Party
Leftover Buffet

I agree that a meal that I don't have to cook is like a mini-vacation. Here-here!

breakfast eggs, toast, pan cakes, or breakfast tacos. (fresh fruit too)

Lunch, left over suppers

suppers, home made pizza with salad
Southwest Sausage hash and corn bread, grilled chicken, potatoes, broccoli, and biscuits, homemade hamburger helper (with tomatoes and rice) and salad and fruit salad

I love Patty Melts but have gotten away from eating a large hamburger. I have started browning ground beef when I get it sale and freeze in freezer bags. I use the ground beef crumbles to make the patty melt and find you get all the flavor with much less meat. I pound of uncooked ground beef will make about 5 sandwiches. I caramelize onions and then build the sandwich with cheese, onions, ground beef,and a little more cheese to hold everything together when it cooks. Kids love because they can "dip" the sandwich in ketchup. This is a great way to serve hamburgers on a budget.
