We tend to go to lots of picnics and potlucks during the summer and this is a refreshingly different un-green salad to bring along. Another bonus is that you can throw this together in about 10 minutes and it usually disappears just as quickly. I hope you like it.
Pineapple Carrot Salad
- 4 carrots
- 1/2 cup raisins
- 1/2 cup pineapple chunks
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1/2 teaspoon fresh grated ginger
- 1/2 tablespoon chopped fresh basil
Grate carrots, and combine in a bowl with raisins, pineapple chunks and basil. Whisk honey, lime juice and ginger together and mix with other ingredients.

I've seen many recipes for carrot salad and they really didn't appeal to me much but your version with the pineapple and ginger sounds really yummy!
I think my daughters might actually eat this. I will try it this weekend.
This looks like a much healthier version of carrot salad than I usually see!
