GCC Recipe Swap- Homemade Pancakes


One of the funniest things I hear from people is that they use prepared pancake mix because it's easier and cheaper than making your own from scratch.  But basically prepared mix is stirring together dry ingredients with wet....just like homemade.  Plus, the packaged stuff is definitely more expensive and to me, it has a strange aftertaste.  So here's our recipe for pancakes.  We eat them a lot around here and the homemade taste is so much better.  There is also the benefit of adding berries, whole wheat flour or chocolate chips to customize or make them more nutritious (among other fun ingredients).   There's nothing complicated about these like some pancake recipes.  You'll most likely have everything in your pantry already.  We usually triple the recipe.

Simple Homemade Pancakes



1 egg
3/4 cup milk 

2 tablespoons butter, melted

1 cup flour

1 tablespoon sugar

3 teaspoons baking powder

1/2 teaspoon salt



Beat egg until fluffy.  Add milk and melted margarine.  Add dry ingredients and mix well. Let batter set for 10-15 minutes to thicken up.  This produces a lighter fluffier pancake.   Heat a heavy griddle or fry pan which is greased with a little oil or butter.   The pan is hot enough when a drop of water sizzles on the pan.Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon. When bubbles appear on surface and begin to break, turn over and cook the other side.

I totally agree-- making homemade pancakes is easy and tastes better! One thing I've done to eliminate a little of the morning mixing is to make 10 batches of the dry ingredients and store it in the pantry like that. Then all I have to add is the egg, water (I add powd. milk to the dry ingredients) and oil (although I like the butter suggestion.)

I'm not sure I've ever commented on your blog, but I love it and feel inspired to lower our grocery budget in a way that I can do (making food from scratch, and without coupons or shopping at 10 different stores!) Thank you!

I agree - pancake mixes are such a waste of money when you think about how easily and cheaply you can whip up a batch.
