Menu Plan Monday


It's been a while since I've fed others rather than just our family of 6. I'm part of a group that provides meals to new mom's, grieving families, or family's recovering from health problems. So this week you'll not only see a meal for company but also a doubled recipe to be taken to another family. If you plan well, it really is possible to spread the food luv around. Even on a tight budget. Oh, and remember the awesome purchase of fresh cranberries last week? They will start showing up in this weeks menu.


Breakfasts

Oatmeal
Eggs and Toast
Leftover muffins

Dinners

Meatless Chili Mac and hot buttered peas
Crockpot Whole Chicken, mashed potatoes, green beans
Texas Style Lasagna, green salad (doubled for another family as well as ours)
Chicken Noodle soup (with leftover chicken carcass) Buttery Bread Machine Rolls
Leftover Night

I thought about you this weekend when I read an article in the local paper about a United Way challenge in which many local leaders participated. They were to eat on only $25 for one week, similiar to what food stamps offers. I was almost laughing out loud at the reactions many of these people were having. . . They thought it was unbearably hard! One lady had to eat peanut butter and jelly every day!! I am not as accomplished at keeping my grocery budget at rock bottom, but even I could have survived very well on the challenge!! One person bought 2 lbs of chicken on sale for $6!!! They thought that was a good deal!!

I can't wait to see your shopping trip because I can never get away from making lasagna without it breaking the bank...and your doubling it! That is just something I have to see.

Wish I could get my guys to eat meatless chili...or meatless anything! You have some great recipes for this week.

My son loves the 5 min mug cakes! I measure the dry ingredients out, baggy them up, and throw them in the pantry. When he feels like one, he grabs and goes! lol

I don't know how you do it, I'm still learning how to feed picky eaters on a limited budget. You're such an inspiration. I can't wait to try the overnight amish oatmeal, if it really does taste like an oatmeal cookie I'll be sold.

I really like the meatless dishes and this type menu plan. I love meatless chili mac and hot buttered peasTamale lentil casserole. lots of variety from the menu.
