Easiest Mac and Cheese Ever!

Hung out with some great ladies today and they reminded me of a super easy and EXCEEDINGLY frugal recipe for the World's Easiest Mac and Cheese. I posted a while ago and though I'd sent it your way again. It's cooking in my oven this very minute!

World's Easiest Macaroni and Cheese!
  • 1 (16 ounce) container cottage cheese
  • 16 ounces of uncooked elbow macaroni
  • 16 ounces water
  • 16 ounces shredded cheddar cheese
Put Cottage Cheese in 9 x 13 cake pan. Add Macaroni. Add Water. Add shredded cheese. Stir together. Place in preheated 350 degree oven. Take out after 30 minutes and stir. Test macaroni for doneness. If it needs more time try for 10 more minutes. Don't overbake or it will dry out.

Thats sounds good and makes so much recipe/cooking sense. How did yours turn out?? Do your kids gobble it up??
My main issue is I have trouble keeping cottage cheese in the refer at all - both my boys LOVE it!!

This sounds REALLY good. I only worry that the cottage cheese wont be good. I know I dont love the lasanga recipes that use cottage cheese instead of ricotta.

I made this when you first posted it with shredded sharp cheddar and it was good. Cheddar doesn't melt very smooth so the texture was weird to me but the taste was very good. I have to confess that it was the first time I had ever tried cottage cheese and I don't know what I was expecting but, it tasted good! I guess the way it looks always kind of turned me off to it. Right now I have a pan of it in the oven with 8 oz of shredded velvetta and 8 oz of shredded gouda as they are nice and smooth when melted. I can't wait to try different combinations with your super easy formula! Thanks for sharing.
