Menu Plan Monday


I mentioned earlier in the week that I came across a great cookbook for my newly vegetarian daughter. So this week I'll be implementing some of the recipes she chose from the book. Here's what's cooking at our house this week.

Breakfasts:

I've been having the kids make their own. Their choices are oatmeal, smoothies, and homemade freezer pancakes, waffles or muffins.

Dinners:

Falafel Sandwiches (pg 51 of Family Vegetarian Cooking)
Dublin Coddle
Nacho Casserole (pg 165 of Family Vegetarian Cooking)
Easy Mac and Cheese
Baked Potato Bar with veggie chili, cheese, or steamed broccoli
Omelets and fruit
Leftover Buffet

Check back tomorrow for the big shopping trip.

There are wonderful (and some not so wonderful) vegetarian recipes at vegweb.com. And they are rated. Good luck feeding your newly veg daughter. I'm sure you'll do just fine.

I'd love to see your recipe for veggie chili (on the potato bar). Many years ago, I had some incredible chili in Colorado. I don't know if it was the altitude, the exhaustion/hunger, or if it really was as incredible as I remember it! My mom & I were trying to decipher the recipe when it occurred to us that it was vegetarian. Most veggie chilis seem like they are missing something, but this one didn't. I've been trying to re-create it ever since!

Hi Gayle, I am relatively new to your blog, and I’m lovin' it! Thank you so much for all of our great ideas. I also homeschool and have a hubby who happens to work from home, so everyone is home for lunch (including my icky-picky toddler). So my question is: what do you do for lunches? I have been trying to make enough of dinner to have it for leftover lunch the next day. I also keep homemade soups and burritos in the freezer just in case I can't make last night's dinner stretch. I have gleaned so much practical wisdom from your blog and would love to know how you tackle the midday meal. Thanks!

"Dinner Table Conversation," I know what you mean about veggie chili missing something (must be the MEAT LOL!). I have made it with cooked wheat berries instead of meat, which gives a little "chewy" to the texture and makes it a complete protein. Best of all, it's CHEAP!
