Menu Monday


I felt like cooking today so I whipped up a batch of pumpkin chocolate chip muffins for my freezer stash. I also have some black beans soaking so I can give these gluten free Black Bean Brownies a try. Don't tell my kids. I'm going to try and pass them off as the real thing. Here's what else is cooking at our house this week.

Breakfasts: choice of...

Freezer muffins, fruit and yogurt smoothies, eggs or oatmeal.

Dinners:

Crocked Brown Rice on a Budget (really versatile recipe)
Crock pot Ham and Scalloped potatoes
Baked Ziti
Lentil Burritos
Grilled Tuna Sandwiches
Leftover Buffet
Eggs and toast

Question: is there a trick to freezing muffins so they will thaw right? I've never tried it but want to stock my freezer with some good stuff.

Please let us know if your kids fall for the brownies. I've been contemplating trying them but am just so worried that they will taste less like brownies and more like.....fake, healthy brownies. lol

The Crocked Brown Rice sounds yummy. I'm always on the lookout for healthy, meatless meals. The recipe doesn't say, but I"m guessing you use uncooked brown rice, correct?

No trick to freezing muffins. Just make sure they are completely cooled and then freeze them in an airtight container. I've used plastic containers and freezer bags with great success.
