Menu Monday


I hope you all had a tummy full of good food and great family times over the Thanksgiving holiday. And now comes one of my favorite foodie weeks of the year. The week AFTER thanksgiving when all those leftovers get re-created into scrumptious new meals. I have a freezer FULL of homemade turkey stock and I'm ready for some good meals this week. We also have our final birthday of the year on Sunday. My only daughter, who happens to be a vegetarian, turns 15.

So here is what's cooking this week.

Breakfasts:

Pumpkin Muffins, pancakes, fruit or smoothies

Dinners:

Creamy Turkey Soup
and Homemade Rolls
Turkey Pot Pie with Stuffing Crust
Quick Turkey Tetrazzini
Egg Salad Sandwiches and veggies with dip
White Chili and cornbread
Leftover Buffet
Birthday - Cheese Ravioli in Marinara, green salad, garlic bread and Cappuccino Cheesecake.

Looks like you had a lot of turkey leftover. We didn't. We ate it all on Friday. But there were a lot of us. The Creamy Turkey soup looks really delicious.

we are eating out of the chest freezer due to budget AND without an oven. We do have a toaster oven so I am being creative. We are eating a lot of chicken soup, but I am roasting a chicken in the toaster oven and making herbed butter pasta to go with it.
cant wait for the grocery money to get here!!!! hehe

What does your daughter eat when you have a meat meal, like the turkey pot pie? Just curious how you handle special diets with a family and a meal plan. Thanks!
